Tortilla Soup Sunday


So we'd had it. Bryanna and her kids have all been sick. I have been sick. We were finally all getting a little healthier and decided we needed to do something! I was sick of staring at the walls in my apartment and I was sick of hearing the TV.
So during my boredom this week I actually read through a recipe book that my mom gave me for Christmas. There was a recipe for tortilla soup and it sounded intriguing so we decided to try it. Bry agreed it'd be good and we had our "big" Sunday plans. Lindsay made it too which was a nice surprise cause I didn't expect her to be able to be there! So with a little team work we made some delicious soup. Nothing like good food and good friends :-) We agreed when the guys come home we'll have to make this for them and probably at least double the recipe :-P
Here is the recipe if you ever want to try it. We all really enjoyed it! This serves 8, and make the whole thing, cause it doesn't go far lol. I also couldn't find cilantro leaves at the store, but it didn't seem to make a difference when we ate it!


1 TBS vegetable oil
1 onion, minced
1 jalepeno pepper, stemmed, seeded & minced
t TBS chili powder
2 garlic cloves, minced
8 cups low sodium chicken broth
1 pound boneless skinless chicken breasts
1 TBS lime juice
5 oz. tortilla chips, crushed into large pieces
3 plum tomatoes, cored, seeded, & chopped
2 ripe avocados, pitted and cut into 1/2 in slices
1/2 cup whole fresh cilantro leaves

1. Heat the oil in a large dutch oven over medium heat until simmering. Add the onion, jalapeno, chili powder and garlic. Cook until onion is softened, about 5 mins. Stir in broth and bring to a simmer. Add chicken and simmer, partially covered, until no longer pink, about 15 mins

2. Remove the chicken and let cool. Continue to simmer the broth for 10 mins. Meanwhile shred chicken into bite sized pieces.

3. Remove the broth from the heat and stir in the lime juice. Divide portions of the tortilla chips, chicken, tomatoes and avocados among individual bowls. Ladle the broth over each bowl and sprinkle with the cilantro!

  1. Im glad you put the recipe on here! I was gonna ask you for it. Im also glad you couldnt find cilantro, gross. :) Besides, we had enough chili powder in there we probably didnt need anything else. :)

  2. yeah i am not a big cilantro fan, so I actually didn't look too hard at the grocery store, LOL

  4. Love your blog! The soup sounds delicious. I'm going to try it! I'm still trying to turn myself into a domesticated housewife. Slowly but surely I will reach my goal (haha). Looking forward to future posts! Oh, Oh, and woohoo to military wives! :)
